Great value, high quality
Times are a bit tight for some us these days, so I tried my hand at making seitan as a healthy, budget-friendly, shelf-stable protein alternative to meat or tofu. I have to say, it is easier to make than I expected, especially with a trusted recipe. On my second try, I got my preferred shape, flavor, and texture absolutely perfect! It is very filling and satisfying to eat.VWG is a much finer powder than regular flour. It easily clouds up and gets everywhere in the kitchen, and unlike flour, it's harder to clean if it gets wet. Live and learn!Especially bundled with the nutritional yeast, the price per ounce and per protein/calorie is just unbeatable. Definitely a healthy penny-pincher's dream pantry staple!

Best Vital Wheat Gluten
I have eight children at home still. We eat a *lot* of bread. I grind my own wheat and make bread from scratch. Anthony’s Vital Wheat Gluten is awesome. I get consistently raised loaves that are light and fluffy. Great product at a great price. This is the one I buy over and over again.

Excellent quality for true whole wheat bread baking
My wife has been using Anthony's Vital Wheat Gluten for years once she embarked on making true whole wheat bread from the ground up. She buys organic wheat berries that she grinds into flour with a Nutramil and bakes in her Zojirushi bread machine. There's nothing like true, home made really whole wheat bread and Anthony's Vital Wheat Gluten is a big part of her success in creating this delicious "staff of life." Her changes in the way she cooks for us has dropped my A1C from over 8 down to a 5. I've also lost 81 pounds since she started real, old fashioned cooking of food the way it used to be. Great product that's be a part of big improvements in our lives.

Seitan! budget secret for making inexpensive dishes that either replace meat, or help stretch meat
I like Anthony's products, never have any issues with this brand. I have purchased this vital wheat gluten a couple of times now. I don't go through a lot, but I do keep some in my baking cupboard for the occasional loaf of bread. My main use for it though is when I make Seitan. I am not vegan or vegetarian, but I like to eat, and I enjoy trying out a variety of recipes from all sorts of diets, cuisines, etc. I find that my stomach often growls the most when I am perusing plant-based recipes (take note that plant-based means only that-- that the focus in on plants, but does not necessarily omit other food sources). I like the creativity that people come up with in using foods. Mmm I love to eat.When it comes to seitan, it just looks so good, and costs so much less than the equivalent in a piece of meat. I have made lovely gravies to go over seitan "steaks", have made strips to use in "beef" stroganoff, and so on. Taste and texture is amusingly impressive. I am not at all pushing any sort of diet or way of eating, but if you are a curious eater, give it a try. If you are planning for the future and trying to figure out ways to stretch your meat budget (either adding in seitan to pieced of meat, or fully skipping a meat-based meal) then this is a wonderful option. Stretch that budget, get creative!! I use regular feef or chicken stock or bouillon to make gravies and add meaty flavor! I also use texturized protein products for same purpose, but for those that don't want to take in too much soy then making seitan is a good option. Obviously (?) this is not for gluten sensitive folks. Seitan is not hard to make but definitely follow a recipe and get good at making one type of item. Let that be your go to option.Seitan is high in protein and fairly low in calories, fat, and carbohydrates. It also contains a number of minerals. "Compared to beef loin, seitan contains fewer calories and less fat but nearly the same amount of protein"

Good Stuff!
It works great! My whole wheat bread used to be dense and flat. I like it that way, but it wasn't something others could enjoy. Using this product, it rises like white bread would. I recommend it-and the price is right!
